Wild Blueberry Chia Pudding
10 minutes, plus overnight · Serves 2
- 1/4 cup chia seeds
- 1 cup coconut milk
- 1 cup frozen wild blueberries
- 1 tbsp maple syrup
- 1 tsp vanilla extract
- 01 Whisk the chia, coconut milk, maple syrup, and vanilla together in a jar. Whisk again after 5 minutes — that second whisk is what stops it setting into one solid clump.
- 02 Refrigerate overnight.
- 03 Stir the wild blueberries through in the morning, straight from frozen. They thaw in minutes and stain the whole thing purple.
Wild blueberries — the small, dark, frozen kind — are not the same fruit as regular cultivated blueberries. They are more intensely flavoured and they hold up better here.
Breakfast that gets made the night before is the most reliable way to eat well on a bad morning.
